Eat More Not Less: Mashed Potatoes

Mashed potatoes are a staple on the holiday dinner table, and they’re a great way to feed a crowd easily and affordably.  Mashed potatoes may be easy on the wallet, but not always on the waist. Just one cup can have 306 calories and 25 grams of fat!  Here is a traditional recipe, made with whole milk and lots of butter:

But you can make these mashed potatoes healthier, by decreasing the amount of butter and replacing whole milk with reduced fat milk.  This version of mashed potatoes has only 202 calories and 3.8 grams of fat per 1 cup serving!

You can also create your own variations to this recipe, adding chives, rosemary, or other spices and herbs for extra flavor.  Be as creative as you want!
