Non-starchy vegetables (NSV) are a good source of fiber and many vitamins, minerals, phytochemicals and antioxidants, plus they are very low in calories.

Serving Sizes

One serving of NSV is:

•    1/2 cup most raw and cooked vegetables (including cooked  leafy vegetables)

•    1 cup raw leafy vegetables (such as lettuce, spinach, etc.)

As with fruits, getting a colorful variety of NSV is important for their beneficial vitamins, minerals, fiber, phytochemicals and antioxidants.
