Recipe - Applesauce Banana Bread
4 bananas, ripe
1 cup sugar
1/2 cup applesauce
1 tsp vanilla extract
2 eggs
1 tsp baking soda
1 Tbs baking powder
1 tsp salt
2 cups flour
Preheat the over to 350° Bake. Place the bananas in a large bowl and mash with an electric mixer. Stir in the sugar and let stand for 15 minutes.
Add the applesauce and eggs and beat well. Add the remaining ingredients and mix thoroughly. Pour into a 9”x5” loaf pan coated with nonstick vegetable spray. Bake for 45 minutes, or until a wooden toothpick inserted in the center of the loaf comes out clean.
Remove from the oven and let stand for 10 minutes before removing from the pan. Cool on a wire rack.
Yield: 16 servings (serving size: 1 slice = 72.5 grams or 2.6 ounces)
