Recipe - Mediterranean Orzo Salad with Feta

Orzo pasta, uncooked
Baby spinach
Sun-dried tomatoes
Red onion, chopped
Salt and pepper
Artichoke hearts (optional), jar marinated, reserve marinade for dressing
Low-fat feta cheese

Cook orzo pasta “al-dente” according to directions on package, omitting salt and fat.  Once cooked, drain and rinse with cold water to release the excess starch.

Combine the orzo, baby spinach, sun-dried tomatoes, red onions, and low-fat feta cheese in a large bowl.  Drain and chop artichoke hearts if using.  Use artichoke marinade as dressing. Gently toss salad and enjoy.
