Recipe - Pevre – Salsa de Chile with Cod

Salsa:
2 Medium tomatoes
1 cup cilantro
1 tbsp olive oil
2 yellow peppers
4 garlic cloves
Salt to taste

Fish:
4 4-oz Cod fillets or white fish fillets
Pam cooking spray

In a food processor, combine the tomatoes, cilantro, olive oil, yellow peppers, garlic, and salt. Blend. Set aside to pour over the fish.

Under medium heat, spray the Pam cooking spray in a pan and cook the fish until cooked through – about 6 minutes.

Yield: 4 servings (serving size: 4 oz. Fish + 1⁄2 cup salsa)
